Lentil casserole with tofu
It goes well with yogurt with mint and lime juice. Even a fried fish fillet fits perfectly. Any spicy or neutral tofu is suitable for this recipe.
Ingredient List (2 People)
2 cloves of garlic
1 onion
1 teaspoon of oil
100 g of red lentils
2 tablespoons of curry powder
1 teaspoon of ground ginger
400 ml of vegetable broth
100 ml of coconut
150 g of tofu
1 tsp lime juice (alternatively, lemon)
Salt and pepper
Preparation
Peel the garlic cloves and onion and chop both coarsely.
Heat the oil in a saucepan and fry the onions and garlic until the mixture is colorless. Add the lentils, curry powder and ginger. Steam for 20 seconds and fill with broth and coconut milk. Bring covered to a boil and cook gently over medium heat for about 10 minutes.
Meanwhile, dice the tofu. Mix with the cooked lentils and heat briefly.
Season with lime juice, salt and pepper.
