Chef's salad with balsamic dressing
This variant of the chef's salad has nothing heavy. It is filling, is really good for your health and is rich in nutrients.
Ingredient List (2 People)
For the dressing:
2 teaspoons of olive oil
1 teaspoon of balsamic vinegar
1 finely chopped garlic clove
½ teaspoon of Dijon mustard
¼ teaspoon of salt
Pepper from the mill
1 new medium sized salad, washed, pinched into small pieces and dried well.
200 g of young spinach leaves, washed, larger leaves cut into small pieces and dried well
1 shallot, finely diced
2 sliced tomatoes
8 hard-boiled eggs, the egg yolks removed and only the coarsely diced egg whites.
12 slices of breadcrumbs (eg soy ham) or 200 g of smoked tofu, diced.
4-5 finely chopped parsley stalks
Preparation:
Place all the ingredients for the dressing in a small bowl or screw glass and mix thoroughly.
Pour the dressing, romaine salad, spinach, shallots and tomatoes into a bowl and mix.
Arrange the salad on two plates and place the egg white and the sliced on top.
Sprinkle with parsley and serve immediately.
