Bean and feta salad
For a delicious lunch or dinner.
List of ingredients (4 people)
For the salad
250 g of halved cherry tomatoes
1 cucumber, quartered lengthwise and diced
400 g of canned lima beans
1 red onion, cut into thin rings
1 yellow pepper, diced
2 tablespoons of chopped fresh basil or chopped fresh mint
2 tablespoons of chopped fresh smooth parsley
75 g of sown Kalamata olives, halved
125 g of lean feta, in pieces
For the dressing
1 tablespoon of extra virgin olive oil
Juice of ½ lemon
Preparation
Put all the ingredients for the salad, except the feta, in a large bowl and mix everything by shaking.
For the dressing, whisk the oil and lemon juice in a small bowl.
Pour the dressing over the salad and shake the salad again to distribute the dressing well.
Garnish with the pieces of feta cheese before serving.
