Quinoa Chicken Salad

Ingredient List (1 Person)
40g quinoa
1/2 cucumber
1/2 paprika
5 cherry tomatoes
150g of chicken breast fillet
2 handfuls of leaf salad (e.g. lamb's lettuce, arugula, romaine lettuce)
Avocado and lime sauce:
50g avocado
1/2 lime juice
1 tablespoon of chopped parsley
freshly ground black pepper

Preparation:
Rinse the quinoa under hot water and prepare it according to the instructions on the package.
Meanwhile, wash and clean the cucumber, tomato and paprika and cut into cubes.
Cut the chicken breasts into strips and fry them in an oil-free coated pan until crispy.
Prepare the dressing: Remove the avocado pulp from the skin and mash it with a fork. Add the lime, parsley, pepper and salt and mix everything with a blender or fork.
Separate the salad leaves, wash them and shake them. Arrange them on a plate or in a bowl.
Drain the quinoa. Place the vegetables, quinoa, and chicken breast strips on the plate or bowl and spread the avocado dressing over the salad.
