Chicken salad with seven colors
Delicious salad: rich in antioxidants and also very suitable to take away.
Ingredient List (2 People)
Salad:
2 chicken breasts marinated in teriyaki sauce, grilled and cooled
1 pear (possibly peeled) cut into cubes
10 blue grapes
1 small tangerine
1 yellow pepper, cut into thin sticks
1 carrot, cut into thin sticks
1/4 avocado, diced
2 chopped red onions
10 cherry tomatoes
1 cup broccoli with broccoli florets
mixed green salad or raw spinach
The dressing
1 tablespoon of rice vinegar
2 teaspoons of soy sauce
1/2 teaspoon of sugar
1/8 teaspoon ground ginger or lightly freshly grated ginger
1/4 teaspoon of sesame oil
pinch of white pepper
Preparation
Cut the grilled chicken breasts into strips and place them in a large salad bowl with the other salad ingredients. Mix all the ingredients for the dressing in a small bowl. Pour the dressing over the salad just before eating and mix well.
