Mozzarella and zucchini rolls
Ingredient List (2 People)
2 large courgettes
100 g of thinly sliced Parma ham
0.5 chili or chili powder
2 spring onions
1 tablespoon of olive oil
1 teaspoon of lemon juice
Salt and pepper
250 g of lean mozzarella
Preparation:
Wash the zucchini and rub dry
Cut lengthwise into thin, wide strips with a potato peeler or a sharp knife.
Chop the mozzarella into small pieces or cut into very thin slices.
Cover a few strips of zucchini with mozzarella, ham and chilli, pepper, roll up and secure with a toothpick.
Place the rolls next to each other in a fireproof dish.
Chop the remaining courgettes and spring onions into small pieces and sprinkle the rolls.
Season again with salt and pepper, sprinkle with olive oil and lemon juice and bake in a preheated oven at 180 degrees for about 20 minutes.
