Chicken with tarragon
The tarragon here gives the flavor of a Bernese without its calories! Stewed vegetables or natural or basmati rice are suitable as a side dish.
Ingredient List (2 People)
2 chicken breasts, boneless and skinless
1/4 teaspoon of salt
1 tablespoon of fresh tarragon
1/2 cup low sodium chicken broth
1 tablespoon of Dijon mustard
Preparation:
Season the chicken breasts with salt and tarragon.
Sauté the chicken breasts over medium heat in a pan coated with a little oil on each side for 3 minutes until browned.
Place the chicken breasts on a plate and set aside.
Degrease the pan with the broth and loosen anything that sticks to the bottom.
Stir in the mustard and cook for about 3 minutes until reduced and thick.
Return the chicken to the pan and turn it over so that it is covered on all sides with the sauce.
