Curry lentil stew


Ingredient List (2 People)

200 g red lentils
1 onion
3 cloves of garlic
2 tsp ground ginger
3 teaspoons of curry powder
200 ml of coconut milk
800 ml of vegetable broth
salt
pepper
a small glass of lemon juice
(event some yogurt as sauce on top)


Preparation

Finely chop the onion and garlic and fry them briefly in oil. Add the lentils, curry and ginger powder and sauté. Pour 800 ml of vegetable broth and 200 ml of coconut milk, bring to a boil and simmer for 10 m. Then season to taste with salt, pepper and lemon juice. For the white sauce you can use natural yogurt with a little dried mint. (without this sauce it's a vegan dish)
