Zucchini and carrot tagliatelle with walnut cream
Ingredient List (2 People)
For the spaghetti:
3 courgettes
4 carrots
Onion
Garlic
a little oil for frying
For the cream:
125 g of lean curd
50 g Parmesan (or grated Gouda)
70g walnuts
5 basil leaves
1 clove of garlic
1 tablespoon of oil
1 tablespoon of tomato paste
1 teaspoon of vinegar
1/2 cup of water
salt and pepper
Preparation:
For the cream: chop all the ingredients, mix and blend finely.
For the pasta: turn the vegetables into spaghetti with the spiral slicer (or cut them into thin strips) and fry them in a pan with onion and garlic (quantity to taste). Season with salt and pepper. Then add the cream, mix well, let it heat up and serve it all. A little tip: pasta can be prepared with any type of sauce, eg. bolognese sauce, tomato pesto, basil pesto, etc. 😊 Enjoy your meal!
