Fried egg with beans and peppers
Ingredient List (1 Person)
2 eggs
150 g of green beans
50 g of red peppers
50 g Brussels sprouts, fresh or frozen
30 g of peas, fresh or frozen
1 onion
1 tablespoon of olive oil
salt
pepper
Preparation
Wash and clean the beans, then cut them into small pieces - cook them in a pot with boiling water for 5 - 6 minutes - drain them in a sieve.
Clean the fresh Brussels sprouts, remove the wilted leaves and then allow the frozen Brussels sprouts to thaw in half and then cut in half - remove the fresh peas from the pod and allow them to thaw.
Cut the peppers in half and remove the seeds and partitions - Cut the peppers into small pieces - Peel the onion and cut into cubes.
Heat the olive oil in a pan and sauté the onion cubes - add beans, Brussels sprouts, peas and peppers and sauté everything - season the vegetables with salt and pepper.
Fry the eggs, close the pan with a lid if desired, so the eggs will cook faster on top - season the fried eggs and serve all hot in the pan.
