Protein vegetables
This protein-rich vegetarian meal is quick and easy to prepare. It is excellent for lunch or as a side dish for dinner. Try it with Bacalhau or with grilled chicken.
List of ingredients (6 people)
100 g of pesto
2 125g buffalo mozzarella balls, drained and cut into slices
1 tablespoon of olive oil
4 medium-sized zucchini, cut into 2mm thick rings
3-4 basil leaves
6 tablespoons of gourmet tomato soup
Preparation:
Preheat the oven to 200 ° C.
Line the bottom of a pan with the zucchini. Add 1 tablespoon of pesto, then a layer of sliced mozzarella.
Sprinkle with 1 tablespoon of gourmet tomato soup powder.
Continue the layers and last with a layer of zucchini. Sprinkle the courgettes with a little oil, season everything and then cover with aluminum foil or a lid.
Bake for 20 minutes, then remove the lid and cook for another 10-15 minutes or until golden brown.
Garnish with a few basil leaves.
